Baked Barramundi With Vine Ripened Tomatoes, Garlic & Capers

Serves 2

INGREDIENTS

2 fillets of Barramundi
1 Tbsp capers
1 large garlic glove or 2 small cloves, thinly sliced
1 packet of vine ripened tomatoes
1 lemon
Salt + Pepper
Drizzle of extra virgin olive oil

METHOD

  1. Pre-heat the oven to 200 degrees celsius fan forced

  2. Place the barramundi skin side down and add the capers, vine ripped tomatoes and garlic to the pan

  3. Lightly drizzle over the fish and tomatoes some extra virgin olive oil and the juice of half a lemon and season with salt and pepper

  4. Bake for 20 mins or until cooked through and serve with the other half of the lemon cut into wedges and a salad
